Editorial
We welcome back Carmel, Breda, and Patrick, from
their training trip to the good old U. S. A. we trust they had
a lovely time, and that they are full of new ideas and helpful
suggestions for us here, the Clubhouse Community. Members are
getting ready for Halloween. An employment dinner will be held
on the last Friday of the Month. New members are settling into
the Clubhouse community very well. Breda has asked us did West
Meath, win the All Ireland, watch this space next month , we will
give you the answer to that question.

A Ghost Story
Eileen and her husband Ben are driving home one
night from the local ballroom of romance. They had gone out to celebrate
their Tenth year of marriage. The place where the Ballroom of Romance
is held is a small country hall in Dunlavin. As luck would have
it they get lost in their car. They stop to ask a small boy out
walking his dog, how to get to the town. The little boy tells them
how to get to town. Later, as they sit in a bar in town, they tell
the barman how they got lost, and a little boy out with his dog
told them how to get to town, The barman tells the astonished couple,
you met the Ghost of little Tommy Tucker, and his dog, who died
in a car crash on that road ten years ago.

My True Love
I had a dream of something new.
About the future that lies in me and you.
The dream was fulfilled with happiness and joy

There was a song I heard before,
It was a love song I’m really sure.
The lyrics had mentioned, “All the way”,
Meaning we’ll be together forever and a day.
I felt your love touching my heart.

Walking hand in hand along the street.
I had a vision, a sight to see
Closing my eyes, knowing we’ll be

Kids going to school
Another morning has arrived
As the little kids get out of bed
Just look at the innocent hardy child
Awaken from dreams with a sleepy head
Immediately get ready for the day
With clothes neat a hurried meal
Their little hearts full of play
Face another school time ordeal.
To the school they hurry along
Not knowing reason for it at al
l In their fantasy world nothing wrong
As they all line up at the whistle wall
Drawing and arithmetic have to learn
With curious eyes and a working hand
Sometimes alone for mum they yearn
But when school is over all is grand.
Their enchanting faces learning
a lot
Which will benefit them in future years
A good education these kids have got
May they learn with fun little fears
Each child to grow strong & unique
With good news culture and caring ways
For future generations they will speak
To lead this world to better days

Administration Unit Report
The Admin Unit is very busy at the
moment. Lots of work to be done: Invoices, Petty Cash, In-reach
& Out-reach, inputting articles for the newsletters, inputting attendance
etc. Patricia says we are coping very well while Breda is away in
the USA. She will be disappointed to know we didn’t miss her while
she was away and she can be replaced at any time.

Time: 8 pm
225g/8oz Strong Flour
125g/4oz Margarine
Pinch of Salt
Cold Water
4 Large Cooking Apples (peeled and thinly sliced)
Sugar to sweeten apples
Method
Sieve flour and salt into a bowl.
Coarsely rub in the margarine. Add sufficient water to make dough.
Lightly knead. Roll out half of pastry to shape of oven proof plate.
Arrange apples on pastry. Sprinkle with sugar to sweeten. Roll remaining
pastry to cover apples. Dampen edge of base pastry with cold water
to seal. Press top pastry over apples to make the tart. Seal edges.
Put cut on top of pastry to allow steam escape. Bake in preheated
oven at 200 degrees C, 400 degrees F, Gas 6 for 30-35 minutes approx.
If preferred, pastry can be lightly brushed with milk before baking.
Freezer Hints:
Apples
To freeze apples, wash, peel
and core.
Method 1: Cut up into small pieces and stew, sweetened or unsweetened,
with a minimum of water until soft. Then sieve or liquidise and
allow to cool. Pack the purée into rigid containers or plastic bags.
Method 2: Slice the fruit into a bowl
of salted water, then rinse and pack with sugar in alternate layers
into rigid containers. Allow 500g sugar for every 1.5 kg fruit,
and leave 1 cm headspace.
Baked apples may also be frozen. Cook
them as usual, then allow to cool completely and freeze unwrapped
until firm. Pack the apples into a rigid container and divide them
with a sheet of greaseproof paper.
Apple slices have a freezer life of
12 months; apple purée, 6 months; and baked apples 3 months.
To defrost, leave apple slices or purée in an unopened container
at room temperature. If they are to be heated no defrosting is necessary.
Heat baked apples through from frozen at 190 degrees C for 20 minutes.
Painting hint:
After painting leave a bowl
of water with a sliced lemon
or onion in it overnight to
get rid of the paint smell
Olympics 2004
My experience of the Olympics was very enjoyable.
My favourite events were the gymnastics and racquet sports. The
tennis was won by chilly which was the first time they won gold
medals both in the singles and doubles. The Chinese won gold at
the table tennis and dominated in both men's and woman's events.
Everyone was delighted to see Cian win in the show jumping and he
received a big welcome home party. Even though I watched it all
on television I was pleased to see no frontiers last night with
Katherine Thomas who described Beijing which is holding the next
Olympics in 2008 as very easy to get to and you can do it all on
a very reasonable budget. My live event experience with Olympics
was the special Olympics the opening and closing ceremonies were
excellent and the RDS had gymnastics and table tennis where I got
close to the competitors. The only problem with the Olympics is
all other sporting events seem boring after it including the premiership
and the U.S. Open tennis the last grand slam of the year. Maybe
I will get a video, only kill bill volume 2 is a bit violent and
passion of the Christ is a horrible way to portray religion.
