Carton House Appoints New Expert Trio

Eanna Hassett - Director of Operations; David Kearney - Director of Golf; Matthew Murphy - Executive Chef

Carton House, one of Ireland’s most luxurious resorts, has recently expanded its experienced management team with the appointment of new expert trio. Eanna Hassett takes over as Director of Operations, Matthew Murphy as Executive Chef, while PGA professional David Kearney is the new Director of Golf.  These appointments, together with the existing management team, further strengthens Carton House’s reputation for attracting the best talent the hospitality industry has to offer.
 


Eanna Hassett, Director of Operations
 
A diverse and award-winning career in the hospitality industry accompanies Eanna Hassett to Carton House as he takes the helm as Director of Operations. Over the past two decades Eanna has served in many capacities, most recently at Ashford Castle where he held the position of Food & Beverage Director. His career has taken him all over the globe giving him valuable international experience which he now brings to his role at Carton House. Previously, he has held senior roles in F&B departments with some of the world’s top resorts, including the Ritz-Carton group in Dubai, Hong Kong and Tenerife, successfully building a career in flagship properties and playing a vital part in the opening of new hotels and destinations.
 
As Director of Operations, Eanna will lead the successful day-to-day operations at Carton House, enhancing the overall guest experience and service offerings at one of Ireland’s most luxurious and in demand resorts. 
 
David Kearney, Director of Golf
 
Commencing January 2017, David Kearney will take up his role as new Director of Golf at Carton House. A world-renowned and highly respected PGA professional and as Director of the Irish Ladies Golf Union High Performance Unit, David brings his 26 years’ experience as a PGA Professional to his new home of golf in the heart of Maynooth, Co Kildare. With a reputable career spanning over three decades, Mayo man Kearney’s vocation takes him all over the world where he has been honoured to represent the ILGU, the R&A and the PGAs of Europe. Now fresh from leading the Irish ladies team to bronze glory at this year’s World Amateur Team Championships in Mexico, David joins Carton House from his role as Head Professional at Grange Golf Club. Here he hopes to bring some of that experience to assist the rest of the team in hosting a successful World Amateur Championships in 2018 at Carton House.
 
Matthew Murphy, Executive Chef
 
Matthew Murphy has recently occupied the role of Executive Chef at Carton House. A husband and dad of quads, Matthew has just returned from the USA following an extensive and impressive career worldwide with the Ritz-Carlton brand and as owner of his Irish House Gastro Pub in New Orleans. He’s well known stateside from his many TV appearances on The Today Show, E Network and The Food Channel and has won international praise and scooped accolades including ‘Top 4 Farm to Table restaurants’ by Travel and Leisure Magazine for his M Bistro at the Ritz Carlton New Orleans and his Irish House Gastro pub was voted the no. 1 Irish pub in the USA! 
 
In his new role, Matt is responsible for instrumenting a brand-new direction for the resort’s food and service offering. As head of one of the busiest and most diverse kitchens in Ireland, Matt and his team enjoy the challenges of cooking for some Ireland’s and the world’s best sport athletes, Europe’s leaders plus all residents and guests. Matt’s arrival is set to inch Carton House closer in its quest to offer one of the best culinary experiences in Europe.
